What am i doing wrong w/ Scrunching my hair with mousse &&gel ?

Yes you should be using a diffuser for scrunching. I don't know what that mousse you use is, but I would buy a good antifrizz serum (bedhead makes good ones) and put a decent amount in your wet hair before you start scrunching.
